Warm Apple Strudel

Ingredients:
5 granny smith apples, peeled and cored
1 cup brown sugar
1 tablespoon cinnamon
1 teaspoon vanilla
3 tablespoon butter

  1. In a heavy saucepan, heat butter over medium high heat.
  2. Sauté apples until soft.
  3. Add brown sugar, cinnamon, vanilla and cook until bubbly and thick.
  4. Pour onto a pan.
  5. Put into refrigerator and allow to cool completely.


Cinnamon eggnog sauce ingredients:
1 cup whole milk
1 cup heavy cream
1 vanilla bean, split and scraped
4 egg yolks
1/3 cup sugar
1 tablespoon cinnamon
2 cups eggnog

  1. Bring milk, cream and vanilla bean to simmer (do not boil).
  2. Meanwhile, whisk yolks and sugar together.
  3. Ladle out 1/2 cup of hot milk and slowly drizzle into yolks while whisking.
  4. Once 1/2 cup milk is incorporated, pour mixture back into hot milk whisking constantly.
  5. Place pan over low heat stirring constantly.
  6. Stir constantly until sauce thickens slightly; 170 degrees on instant read thermometer.
  7. Immediately strain through fine mesh strainer into a bowl set over an ice bath.
  8. Stir until sauce cools to 40 degrees.
  9. Stir in 1 tablespoon cinnamon and 2 cups of eggnog.
  10. Refrigerate until ready to use.


Other ingredients needed:
1 sheet of puff pastry

Assembly:

  1. Arrange apple mixture down the center of the pastry sheet, leaving about an inch on both sides.
  2. Using a paring knife, make slits starting at the top about a half inch towards the filling. Do this the length of the dough on both sides.
  3. Using a pastry brush, brush the cut sides with water.
  4. Gently wrap the dough over the top of the filling, folding each "tab" you've created into the other to create a "braided" look.
  5. Bake 350 degrees for about 45 minutes to an hour or till golden brown.
  6. Allow to cool before slicing.
